Strawberry Heaven

Dessert, especially cookies, make my heart sing with pleasure. Cookies that can be versatile make me jump for joy. These do both! They’re delicious, easy to change, and have no calories. Just kidding! Of course they have calories but they are oh so worth it. This cookie has several names, (cream cheese cookie, jelly filled, and the most traditional; kolacky) but I have always stuck with the traditional name. Kolacky can be filled with any fruit filling you desire. I have used raspberry in the past but this year, I wanted strawberry. Give them a try this year and enjoy the heavenly taste of kolacky.

Strawberry Kolacky

Approximately 30

  • 1/3 bar of Softened cream cheese (regular not low fat)
  • 1 stick Softened unsalted butter
  • 1 cup AP flour
  • 1 tsp Sugar
  • 1/4 tsp Salt
  • Dash of Cinnamon
  • 1/2 jar of any Seedless fruit jam
  • 1/3 cup Confectionary sugar (decoration)

In a mixer, combine the cream cheese and butter with the paddle attachment. Mix until smooth. Add the flour, sugar, salt, and cinnamon and mix on the lowest speed for 1 minute. Cover the bowl and refrigerate for 15 minutes. This will make the dough easier to handle and roll out. Heat the oven to 350°, remove dough from refrigerator. Roll out the dough on a floured surface and cut into squares about 1″ wide and 1 1/2″ long. Place the jam in a small Ziploc bag and cut a tip off the end so you can squeeze a strip of jam onto the dough.

Once you have put the jam diagonally onto the dough, take the corner pieces that don’t have jam on them and pinch them onto the opposite side. It should look like the picture above. Next, place the unbaked kolacky onto a sheet pan lined with parchment paper.

Bake for 12-15 minutes or until slightly browned. The jam will bake onto the pan some but it should pull off the parchment just fine. Put the baked kolacky on a drying rack. After 10 minutes, sprinkle powdered sugar onto. Just a tip, don’t place the kolacky in a bowl of powdered sugar. They will break apart and they will be way too sweet. They keep well in an air tight container and you can also freeze them! Enjoy these sweet treats!
